Variations in N-linked glycosylation of glycosylation-dependent cell adhesion molecule 1 (GlyCAM-1) whey protein: Intercow differences and dietary effects

In bovine milk serum, the whey proteins with highest N-glycan contribution are lactoferrin, IgG, and glycosylation-dependent cellular adhesion molecule 1 (GlyCAM-1); GlyCAM-1 is dominant N-linked glycoprotein in protein products. Whey base ingredients a range of food products, including infant formulas. Glycan monosaccharide composition variation thereof may affect functionality, such as interaction glycans immune system via recognition receptors. It therefore highly relevant to understand whether how glycosylation (and their functionality) can be modulated. We recently showed that glycoprofile varies between cows during early lactation, whereas lactoferrin was constant. current study, we evaluated intercow differences effects macronutrient supply on profiles major samples Holstein-Friesian cows. Overall, approximately 60% pool sialylated, or fucosylated, both; contributed 78% total number overall glycan pool. The degree fucosylation ranged from 44.8 73.3% cows, this mainly attributed GlyCAM-1. Dietary supplementation fat did not influence serum glycoprofile. Postruminal infusion palm olein, glucose, essential AA resulted shifts within individual ranging some cases 50 71% difference fucosylation, regardless treatment. these data demonstrate glycosylation, particularly variable, although appear related more cow than nutrient supply.
